Salsa Meatloaf

1 pound ground beef sirloin
1/2 cup salsa (plus extra for spreading on top & 'dipping')
1/2 cup Italian seasoned bread crumbs
1/2 cup shredded Cheddar cheese
1 egg, lightly beaten
3 cloves garlic, minced
salt and pepper to taste

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with salt, and pepper. Form into a loaf and place on a foil lined baking sheet. Spread some extra salsa on top.

Bake 1 hour in the preheated oven
